
Scientists have discovered another possible link between everyday nutrition and brain health.
In a new study led by Hirosaki University in Japan, older adults with higher amounts of vitamin C circulating in their blood tended to have healthier-looking brains than those with lower levels.
The findings were published on June 10, 2026, in the journal PLOS One and add to growing evidence that diet may play an important role in keeping the brain healthy later in life.
The brain is one of the body’s busiest organs. It controls movement, memory, emotions, language and decision making every second of the day. As people age, the brain naturally changes.
Some loss of brain tissue is expected, but excessive loss may increase the risk of memory problems and dementia. Scientists are interested in finding simple lifestyle habits that might slow these changes.
Vitamin C has attracted attention because it performs many important jobs in the body. Besides helping the immune system fight infections, it helps produce collagen, supports blood vessels and protects cells from oxidative stress.
Oxidative stress occurs when harmful molecules build up faster than the body can remove them, gradually damaging tissues including the brain.
To explore whether vitamin C is linked with brain health, the researchers recruited 2,044 Japanese adults aged 64 years and older. Each volunteer provided a blood sample so scientists could accurately measure vitamin C levels. The participants also underwent MRI scans so researchers could study different parts of the brain.
The team focused on gray matter and a communication system called the default mode network. Gray matter contains billions of nerve cells that process information.
The default mode network links several brain regions involved in attention, memory, planning and thinking about ourselves. Healthy communication within this network is considered important for normal cognitive function.
When the scientists compared the results, they found that people with lower vitamin C levels were more likely to have smaller amounts of gray matter and weaker communication within the default mode network. These relationships remained even after accounting for age, education and physical activity.
Although these findings are encouraging, the researchers cautioned against assuming that taking vitamin C supplements will automatically prevent dementia.
Because the study only observed participants at one point in time, it cannot determine whether vitamin C directly caused the healthier brain measurements. It is also possible that people with healthier lifestyles naturally had both better diets and healthier brains.
Even so, the study highlights how everyday food choices may influence brain aging. Eating plenty of fruit and vegetables provides vitamin C along with many other nutrients that work together to support overall health.
Combined with regular exercise, quality sleep, social interaction and management of medical conditions, healthy eating remains one of the best strategies for supporting brain function throughout life.
This was a well-designed population study that used objective blood measurements and MRI brain imaging, making the evidence stronger than studies based only on diet surveys. However, the observational design means it cannot establish cause and effect, and the participants came from one country.
Future long-term and clinical studies will be needed before doctors can recommend vitamin C specifically to protect against cognitive decline. Nevertheless, the findings provide another important piece of evidence that nutrition deserves serious attention in research on healthy brain aging.
