
Beetroot and leafy green vegetables are well known for supporting heart health because they contain large amounts of nitrate.
Now researchers have found that one simple habit—chewing a sugary gum after consuming these foods—may temporarily increase their beneficial effects.
The study was led by researchers at King’s College London and appeared in the British Journal of Clinical Pharmacology.
The discovery surprised the scientists because most previous research had suggested that mouth acidity might reduce nitrate conversion rather than improve it.
The human mouth contains billions of bacteria. Some of these bacteria perform an important job by converting nitrate from vegetables into nitrite. The body then changes nitrite into nitric oxide, which helps blood vessels relax and improves blood circulation.
To explore whether saliva chemistry affects this process, healthy volunteers drank beetroot juice before chewing either a sugar-containing chewing gum or a sugar-free version. The same participants later repeated the experiment with the other gum, allowing the researchers to compare the two conditions fairly.
The sugary gum made saliva noticeably more acidic. This change was linked to much higher nitrite levels in both saliva and blood. Participants also experienced a small but measurable fall in blood pressure over the next few hours.
Scientists believe the gum worked because it stayed in the mouth for a long period, allowing oral bacteria more time to convert nitrate into nitrite. This finding highlights the important role that mouth bacteria play in maintaining cardiovascular health.
Despite the promising results, the researchers strongly warned against viewing sugary chewing gum as a health product. Frequent sugar intake can damage teeth and increase the risk of obesity and diabetes if consumed regularly.
Instead, the study serves as proof that improving nitrate conversion may offer new ways to enhance the benefits of healthy foods without increasing sugar intake. Researchers hope future products can create the same effect while remaining safe for long-term use.
The discovery may also interest athletes. Beetroot juice is already widely used to improve endurance, and better nitrate conversion could potentially increase those performance benefits. Larger studies are now planned to test this idea.
Review and analysis: The research identifies a creative new direction for studying diet, oral bacteria, and heart health. However, the study examined only short-term responses in a small group of healthy volunteers, so it cannot support changes in public health advice. Future studies should focus on sugar-free methods that safely improve nitrate metabolism while protecting dental and metabolic health.
