Three Daily Servings of Full-Fat Dairy Show No Harm

Milk, yogurt, and cheese with their natural fat left in have long carried a health warning because of saturated fat.

A new University of Toronto-led study suggests that this warning may be too simple when full dairy foods are eaten as part of an ordinary diet.

In a 12-week trial, 74 adults with overweight or obesity were assigned to diets containing different amounts of dairy. Some participants ate three servings of full-fat dairy every day, yet researchers found no harmful changes in weight, body fat, cholesterol, or insulin resistance.

The results were published in The Journal of Nutrition. They add to a long-running debate about whether full-fat dairy should automatically be considered worse for the heart than lower-fat versions.

Nutrition advice has traditionally focused heavily on saturated fat because it can raise LDL cholesterol. LDL can contribute to fatty deposits inside arteries, increasing the risk of heart attack and stroke over time.

Dairy products contain saturated fat, so public health advice in many countries has often favored skim or reduced-fat milk and lower-fat yogurt. But real foods contain many nutrients at once, and their overall effects may be more complicated than the effect of one nutrient measured by itself.

To test this idea more directly, the researchers divided volunteers into three groups. One group followed a low-dairy diet while cutting calories, a second ate three daily dairy servings without changing calorie intake, and a third ate three dairy servings while eating freely.

The full-fat dairy foods were supplied to participants, and everyone received general healthy-eating advice based on Canada’s food guide. Researchers then tracked changes in body weight, body composition, blood fats, blood pressure, and other markers of metabolism.

The main result was fairly simple: eating three servings of full-fat dairy a day did not produce the expected metabolic harm. People in the dairy groups did not gain more weight or body fat and did not show worse cholesterol levels than those consuming less dairy.

Researchers also did not find evidence that higher dairy intake made insulin resistance worse. Insulin resistance happens when the body’s cells respond poorly to insulin and is an important step toward type 2 diabetes.

Some results even moved in a favorable direction. People eating more dairy had better blood pressure readings and consumed more calcium, protein, and vitamin D.

These nutrients are not minor details. Calcium and vitamin D support bones, while protein is needed for muscles, enzymes, hormones, and many other parts of the body.

Professor Harvey Anderson argues that the answer may lie in the way dairy is built. Scientists call this the dairy matrix, meaning the combination and arrangement of nutrients inside the whole food.

Dairy fat does not arrive in the body by itself. It is eaten together with casein, whey, calcium, phosphorus, and other compounds, and this mixture can affect digestion and the way nutrients are absorbed.

Cheese is a good example of why this matters. It can contain a substantial amount of saturated fat, yet some studies have found that its effects on blood cholesterol are not exactly what would be predicted from saturated fat content alone.

Fermentation may also matter in foods such as yogurt and some cheeses. Bacteria used to make these products can change the food’s structure and create compounds that may influence digestion or metabolism.

The new study therefore supports a growing shift in nutrition science away from judging foods only by single nutrients. A food’s overall effect may depend on its structure, how often it is eaten, and what it replaces in the diet.

There may also be practical benefits for older adults. Aging often brings lower appetite and lower calorie needs, even while the body still needs enough protein, calcium, and vitamin D to protect muscle and bone.

Full-fat dairy can provide energy and nutrients in a form many people already know and enjoy. For someone at risk of losing weight or muscle, removing all higher-fat dairy may not always be necessary.

Still, this study should not be used to claim that unlimited butter, cream, cheese, and other high-fat dairy foods are harmless. The trial tested three servings a day in a controlled setting, not very high intakes over many years.

The study was also small and short. Twelve weeks is enough to measure changes in weight and blood markers, but far too short to determine whether full-fat dairy affects rates of heart attacks, strokes, or diabetes decades later.

Funding is another factor readers should know about. The research was supported by Dairy Research Cluster 3 under the Canadian Agricultural Partnership AgriScience Program and by the Mitacs Accelerate program, so independent confirmation would strengthen confidence in the results.

Even with these cautions, the randomized trial provides useful evidence because participants were assigned to different diets rather than simply reporting what they usually ate. That makes the comparison stronger than many observational studies.

The clearest conclusion is not that full-fat dairy is a health food for everyone. It is that three servings a day did not worsen several major metabolic measures over 12 weeks, challenging the idea that full-fat dairy must automatically be avoided because it contains saturated fat.
